Method:
Preheat the oven to 220C.
Peel, cut (into 5cm pieces) and drain your potatoes in a large pan. Shake well to fluff up the potatoes. Heat the goose fat in the pan in the oven until piping hot. Add the potatoes and roast for an hour, turning the potatoes from time to time until golden and crisp.
Spoon over the Apple & Sage Jelly and return to the oven, after 5 minutes or until the jelly has melted, shake the potatoes around until the jelly has completely covered the potatoes. Sprinkle with salt and serve.
