Crispy Vegetable Fritters with Caramelised Onion Marmalade

A light lunch served with salad or superb side, crunchy and golden these fritters will have your friends writing home…

Grate the courgette, toss with some salt and then parcel into a tea towel or kitchen roll and press to get rid of the excess liquid.  Mix with the carrot, coriander and the garlic.  Add a good grind of black pepper and mix in the baking powder, egg and the flour.  Stir thoroughly to mix.

Heat the oil in a frying pan over a medium heat.  Work in batches so not to overcrowd the pan.  Take spoonfuls of the mixture and press down with a spatula to shape into a fritters.

Cook the fritters for 2-3 mins each side trying not to disturb them whilst they cook.

As soon as you take the fritters from the pan spoon over the Caramelised Onion Marmalade so that it melts over them.

Ingredients

3 courgettes, coarsely grated

salt and pepper

2 carrots, coarsely grated

1 handful coriander, stalks and leaves finely chopped

1 garlic clove, crushed

½ teaspoon baking powder

1 egg

3 tbsp flour

olive oil

1 Jar of Tracklements Caramelised Onion Marmalade
