Egg Bagel Crunch with Spiced Honey Mustard

Method:

Boil the eggs for 8 minutes. Transfer the eggs to a bowl of ice water to cool for about 5 minutes. Once cooled, peel.

Finely dice the red pepper, red onion and jalapeno. Place into a mixing bowl.

Add the eggs to the bowl along with 1 tbsp Rich & Creamy Mayonnaise, 1 tsp Spiced Honey Mustard, 1/2 tsp honey, dill, salt and pepper. Mix well to combine.

Slice the bagel in half and evenly distribute the egg salad mixture onto each side.

Top each bagel half with 30g of feta cheese.

Either air fry your bagel at 205C for 6 minutes or under the grill for 6-8 minutes until the feta is golden.

  • ¼ red onion, finely diced
  • ½ fresh jalapeno
  • 1 tbsp Rich & Creamy Mayonnaise
  • 1 tsp Spiced Honey Mustard
  • ½ tsp honey
  • Small handful chopped dill
  • x1 Multigrain bagel
  • 30g feta cheese
