Thai Chicken Skewers with Fresh Chilli Jam Satay Sauce

Method:

Heat the oven to 180ºC /fan 160ºC /gas mark 4.

Slice the chicken breast into bite-sized chunks and thread them onto the bamboo skewers. Place on a baking tray with some oil and put into the oven for 20-30 minutes until cooked through.

Whilst the chicken is cooking, mix together the Fresh Chilli Jam, soy sauce and peanut butter in a bowl with 100ml of water to make a smooth satay sauce.

Drizzle the sauce over the cooked chicken and serve.

Makes 10 skewers

Ingredients

5 Chicken breasts

10 Bamboo skewers

3 tbsp Fresh Chilli Jam

2 tbsp Soy sauce

3 tbsp Yumello Crunchy Peanut Butter 

1 tbsp Oil
